tuna mango avocado burritos.



Lately, I've been on a burrito kick. I know, right? Awesome for me, not so awesome for my pants. But hey, I'm enjoying it for the time being. Plus this little ditty that I whip up on the regular isn't too offending (or so I tell myself).

I'm the kind of person who discovers a great meal and proceeds to eat it for breakfast lunch and dinner for the next three weeks until I get sick of it and move onto the next passionate food fling. The initial invention of this wrap was no different, until something strange happened: I never... got... sick of it. Seriously, this burrito came into existence (albeit slightly less developed than how it stands today) over three years ago and it's still something I eat on a weekly basis. I've converted family members and friends. And I'm about to convert you!


This wrap is super quick. Five minutes (if you're using a five-minute rice, which I'm guilty of sometimes - although it tastes better for those who are patient enough to wait for basmati) and you've got a burrito stuffed with deliciousness on your plate. It's the perfect on-the-go lunch and even a filling come-home-late-from-work-and-don't-feel-like-cooking dinner. The textures work wonderfully together, with the flaky tuna, creamy avocado, juicy mango and crunchy green onions and the flavours make a perfect harmony of spicy, savoury and a touch of sweet. I'll stop now.

You'll need:

  • 1 large flour tortilla
  • herb & garlic or regular cream cheese
  • 1 tin spicy thai chili tuna (I always use cloverleaf, but other brands make this variation - you can also whip up your own with regular tuna and a spicy thai chili sauce)
  • 1/3 cup cooked white rice (or basmati)
  • 1/4 large ripe mango, sliced
  • 1/4 large ripe avocado, cubed
  • generous serving of chopped green onion

Spread tortilla with a layer of cream cheese to your liking. Top with tuna, rice, mango and avocado and sprinkle with green onions. Wrap (if wrapping didn't take two hands, I'd take a picture of the technique I've developed for wrapping the perfect burrito. If you haven't yet developed your own method, you'll find your way after a few tries!)
